What’s in the lunchboxes of your children?
My older daughters are in Years 7 and 5, and my twins are four years old and attend preschool three days a week this year. I can’t remember the last time I made them a sandwich! I never liked sandwiches at school, and it seems that they do as well. I try to think of it as just another nutritious meal for them. Snack foods (such as dips and crackers) and leftovers are their favorites. Every week, I create 2-3 savory and 2-3 sweet things from my Lunchbox Solution cookbook, which they split with some fruit.
How do you persuade your children to consume nutritious foods?
Set a good example! It’s difficult to encourage a 5-year-old to eat his or her salad and veggies if you’re not eating yours! Also, enlist their assistance in the kitchen. Cooking and preparing food provides them a feeling of control over what goes into their lunchbox or onto their plate, and I’ve found that this encourages my kids to at least ‘taste’ new items. Ignore the messes they’ll create in the kitchen and concentrate on the valuable time you’ll spend together talking about nutritious eating, their favorite foods, and why certain foods are good for them and others should be avoided. I like spending time with my children and am inspired by what they learn, which they will hopefully remember for the rest of their lives.
How do you stay organized enough to pack nutritious lunches for your kids? Meal planning for breakfast, lunch, and supper are two strategies that have proven to be really beneficial to me. Also, the night before, prepare as much as you can for breakfast and lunch. No matter how tired I am at the end of the night, I’d rather be weary in the kitchen for 20 minutes the night before than frantically attempting to get things fixed the following morning. Mornings are already hectic enough, so if I can simply concentrate on getting the kids dressed and serving them breakfast (and knowing what they’re eating), it makes for a much more pleasurable start to the day for everyone.
What’s your best advice for kids with allergies? My best advice for children with allergies who are beginning school is to talk to their teacher about it and make sure they understand what they can and cannot eat. Teachers often provide ‘treats’ at school; to ensure that this is something they can have, you may offer to bring in your own. This is what I do for my fifth-grade daughter, who has a severe allergic reaction to food additives. I send in lollypops that are devoid of additives. I also keep cupcakes in the school canteen’s freezer so she doesn’t miss out on birthday cakes that she can’t eat. I know she understands why she can’t eat what the others do at her age, but I enjoy that she can participate in with her pals without becoming sick.
